To stroll the Champs-Élysées or opt for an alpine adventure…They say you can’t be two places at once, but Park Hyatt Paris-Vendôme has created a venue for guests to experience luxury, Swiss-style, in the heart of the French capital. Through February, the hotel has partnered with Chopard to host the Chalet Fleurier, a private dining cabin for up to 10 guests.
Inspired by the intimate setting of a Swiss chalet, the terrace of the Park Hyatt has been transformed into a cozy winter dining destination. The design is a nod to Fleurier, the small Swiss town where watchmakers Bovet and Parmigiani Fleurier originated and luxury house Chopard has found a home.
Surrounded by snowflakes, wood paneling, fur accents and pine trees, guests of the Chalet Fleurier will enjoy a raclette menu by Executive Chef Jean-François Rouquette of the hotel’s Michelin-starred Pur’ restaurant. This year’s menu includes pumpkin soup with speck emulsion to start, followed by Saint Nicklaus cheese fondue, boiled potatoes and an assortment of cooked or cured meats, then heart of lettuce with Emmental cheese. Park Hyatt’s Pastry Chef Jimmy Mornet closes the meal with vanilla, mango and passion fruit iced Vacherin cheese for something sweet. It’s truly a turophile’s paradise. The Swiss Raclette menu is priced at approximately $187. For approximately $294, the menu will be served with the addition of black truffles from Provence.
