La dolce vita is every day for honeybees. They spend most of their lives making honey, and the flowers they use to create the amber liquid can have a direct effect on its taste, color, and scent. There are more than 300 honey varietals in the United States, including orange blossom, derived from Florida orange trees, and tupelo, which comes from the tupelo trees grown along the Panhandle’s Apalachicola River. Grab a bottle from a local, family-owned honey purveyor like McCoy’s Sunny South Apiaries in Loxahatchee or Fort Pierce’s Gruwell Apiary.
To sample a dish that highlights honey, head to Galley at the Hilton West Palm Beach and order the corn cake with honey yogurt-meringue and market fruit. Chef Samuel Diaz sources his honey from Bee Unique in West Palm Beach, and the fresh berries and stone fruit come from Swank and Satur farms.
