Just how beloved is the sushi at City Oyster? Each week, sushi chef Steven Tran makes nearly 2,000 rolls and the restaurant goes through about 950 pounds of top-quality fish. With that kind of output, it’s safe to say City Oyster is a runaway favorite. When tasked with imagining a roll that captures the essence of Palm Beach, Tran whipped up this towering creation. Dubbed the Palm Beach Roll(s) Royce, it features a base of spicy tuna piled high with lobster, tuna, lump crab, mango, peas, cucumber, and avocado, all doused in spicy mayo. Diners at this Delray Beach eatery can experience this decadent dish throughout the month of April, when it will be on special in honor of the inaugural PBI Dining Awards. (561-272-0220)
