Chef Fabio Pompo Talks Pearl Jam, Ramen and the Beach

We visit Casa Lisboa on Wyndham Street to taste the creations of Executive Chef Fabio Pompo. He takes us through his menu, inspired by Portugal’s famous exploration, from Europe all the way to the Indian Ocean. Influenced with flavours from India, Africa and more, the menu reimagines this journey, allowing us to discover the “Taste of Lusitania” – now available until the 31st of August, due to popular demand.

Pompo, originally from Portugal, hones his expertise of their national cuisine through his experience at the Estoril Hotel, two 1 Star Michelin Restaurants – Feitoria and Ill Gallo – with mentorship from legendary Portuguese chefs José Cordeiro and Benoît Sinthon respectively.

His knowledge and command of the Portuguese cuisine has set Hong Kong’s standards for their national delicacies. As we indulge in these European delights, we chat to Pompo about his top dinner party secrets, and the traditions he holds near to his heart.

 

Dinner parties: Casual or formal?

I’d say casual, nothing is better than not having an imposed dress code! I love being able to relax with my friends, most of them will appreciate not being formal for once.

 

What would your playlist be?

I’m quite eclectic with my music, I appreciate a good bass. My playlist could include anything from classic to techno.

For a really great time though, my playlist must have Pearl Jam, Collective Turmstrass, Dave Brubeck or some inevitable Mariza for a bit of a Portuguese soul.

 

A must-have dish for any dinner party?

Grilled fish and seafood must always be present. Accompanied by some savoury and exotic sauces, salads with fruits, nuts and roots. Trust me, everybody will be licking their fingers after all of this.

 

Your top three Asian dishes?

Ever since I was a little gourmet kid, I’ve always had a fascination for the Japanese cuisine. I love a good sukiyaki, ramen and Katsudon. It’s so hard to choose! I do love Shanghainese Xiao Long Bao, some Taiwanese Beef Noodles, or a Thai Green Curry.

Your favourite Hong Kong restaurants?

I will have to say Yardbird – for late night fun and food with my friends. 22 ships is ideal for a perfect date night. I’d choose Social Place for some dim sum when friends from abroad come to visit. Lastly, Butan – for when I can’t possibly hold off my desire for ramen.

 

What’s the secret to hosting the perfect dinner party?

The music you choose, the food you prepare, the friends you bring in, and of course, the great quality liquor you serve generously!

 

Do you have any Portuguese traditions for dinner parties?

Picture a nice beach with a sunset, gorgeous people, casual clothes, flip flops. Imagine flamed chorizos, codfish cakes, grilled octopus, pork chop sandwiches with mustard. Now, think wine, red and white sangria as UNESCO World Heritage Fado plays in the background. That’s what a traditional dinner party looks like to us.

 

If you could invite anyone to your dinner party, who would they be?

Ha, I would definitely invite my best friends, but if I could invite anyone? I’d probably invite Barack Obama, and, if we could bring him back, Anthony Bourdain.
