Cognac and Food Pairings? It’s a Thing.

Borderies XO Family Reserve Cognac has launched a new intensely aromatic blend crafted from eaux-de-vie, exclusively from the family’s estate situated in the very heart of the Borderies area of the Cognac appellation.

With floral and fruity notes, it’s a brilliant addition to the Borderies XO Family Reserve Cognac range. We asked Jean-Dominique for a few tips on how best to enjoy it.

 

Before we get down to food pairings, what should we know about Borderies XO Family Reserve? 

Borderies XO Family Reserve offers the sensory experience of an intensely aromatic cognac.

The first nose unveils the full extent of its rich array of aromas, with a perfect balance between very aromatic fruity and floral notes, and gourmet notes of pastry and vanilla.

It is rich and elegant with hints of light spices and cinnamon, and after some time in the glass it develops a subtle and elegant character with delicate, long-lasting floral hints.

 

Tell us about the design of the bottle.

 It is essentially the iconic Camus Borderies decanter created in 2000. The materials used for the label and stopper are directly inspired by the worlds of distillation (thanks to the label and ring around the stopper that are in copper) and ageing in French oak casks (that’s the wooden stopper).

The intricate and ornamental disk-shaped pattern of the label evokes the world of clockwork mechanisms and time – it’s a reminder that time is inextricably linked with Cognac, from the rhythm of the seasons until the end of its ageing.

 

 Is there a perfect time or season to drink cognac?

With our new blend’s incredible aromatic and taste potential, it can be enjoyed in any situation, neat or in a cocktail, at any time, in any season. There’s no wrong time!

 

Cognac in cocktails – what would you do?

We would do a highball or punch style in the spring or summer as those cocktails are very light, fresh and elegant, and allow the intensity of the Borderies aromas to express themselves in the glass. During the winter and autumn, we would perhaps choose an old-school cocktail such as a Sazerac or an Old Fashioned.

 

Cognac and food, let’s match it. Give us the usual and the unusual.

You’d usually match the cognac with dark chocolate, coffee, dried fruit and nuts, and even sweet and spicy cakes! We’re talking butterscotch and gingerbread. However, cognac is also the perfect match for a cheese as tangy and salty as the Mimolette. Cognac on ice is a great pair with fresh crab meat, avocado and oysters. Lastly, XO cognac is a fantastic partner to spicy duck with honey or sweet orange.
