The most sacred month for the Muslim community is here and during this month, they practice fasting and avoid eating and drinking during the day time until the sun is up. It is the time for spiritual reflection and spending time with friends and family. It is common to have ‘suhoor’; a meal just before dawn, and ‘iftar’, a meal had directly after sunset. People usually go to the mosque to pray but due to the pandemic and lockdown restrictions, gatherings are not possible. While you are at home this season, how about preparing some interesting and easy recipes for Iftar and make it a delicious month filled with flavours, peace and love? Have a look at these simple recipes and try at home:
Dry Fruits Shake
Take 2 tbsp of cashew, 2 tbsp of almond, 2 tbsp of raisins, 2 tbsp of walnut and 2 tbsp of dates. Soak them overnight and blend along with 15 ml thick milk to make a smooth puree. Now add the puree to 2 cups of milk and blend well. Your Dry Fruits Shake is ready, garnish with chopped cashew, rose petals and Kesar.
Corn & Mint Kebabs
Boil 1 cup of frozen corn and allow it to cool. Blend it to a taste batter along with 15-17 mint leaves, 1 small onion, 2 green chilli, 4-5 garlic cloves and 1-inch ginger. Add 2 tbsp gram flour to the batter, salt to taste and turmeric. Shape the mixture into kebabs and shallow fry on a non-stick tawa using vegetable oil. Serve hot with chutney.
Fruit Salad
Take 1 mango, ¼ watermelon, ½ muskmelon, 1 orange, 100 gms grapes, 2 banana and dice then into small chunks. Add black, black pepper and chaat masala. Toss them well and serve fresh.
Veggies Pakora
Make a thick batter of 1 cup gram flour, ¼ cup semolina, 1 tsp turmeric powder, salt to taste, ½ tsp carom seeds and 1 tsp lemon juice. Make sure the batter is of binding consistency. Now add sliced onion, potato, capsicum and cauliflower chunks to it. Deep fry them in cooking oil till golden brown in colour. Garnish with chaat masala and serve hot with green chutney and masala chai.
Mutton Kebab
Take 1/2 cup gram flour and add 400g minced meat it. Mix well and further add 1/2 cup bread crumbs ½ tsp garam masala, 1 tsp coriander powder, and salt. Next, add 1/2 cup finely chopped mint leaves, coriander leaves, ½ tbsp ginger-garlic paste, and 2 chopped green chillies. Pour 2 tbsp lemon juice and mix everything well to make a dough-like mixture. Cover the bowl and set it aside for 30 minutes or refrigerate it overnight. Using a tablespoon, scoop out the mixture and make balls. Flatten them to make kebabs and set them aside. Deep fry the kebabs in hot oil until golden brown. Transfer them on a plate lined with a paper towel. Serve hot with mint chutney and onion rings.
Mohabbat ka Sharbat
To make this signature drink of iftar celebration, you need 1 cup watermelon chunk, 1.5 cups chilled milk, 4 tbsp powdered sugar, 1 tsp Roohafza and some ice cubes. Take a shaker and add all the ingredients well. Serve chilled in a glass.
