Raw Pie Pumpkin
Crust Ingredients
- 2 cups walnuts
- 2 cups raisins
- Pinch of salt (optional)
Pie Filling Ingredients
- 1 sugar pumpkin peeled, seeded and
- cubed (about 6-7 cups)
- 1/4 cup melted coconut oil
- 3-5 tbsps. coconut nectar or other
- sweetener
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1/2 tsp. cloves
Method
For the crust, pulse the walnuts in a food processor until they become crumbs. Then, add raisins and salt, and process until mixture begins to stick together. Press into pie dish and put in fridge. For the filling, blend all ingredients until smooth. If mixture becomes runny, let it thicken in a bowl in the fridge. Then, spread into crust and refrigerate overnight until it’s set. Slice and serve.
