In a raw diet, refined sugar should be avoided. Most raw “baking” recipes substitute refined sugar with a healthier, all-natural ingredient. Common substitutions include raw honey (which is not vegan), maple syrup, and processed dates. To make your dates sugar-substitute ready, combine them with water in a food processor until smooth. The amount of water to dates depends on how thick or loose you prefer the final syrup to be. A good starting ratio to keep in mind is one cup of pitted dates to two cups of water.
