Disclaimer: I’m not by any means a vegan, and though I try to eat healthy for the most part, there’s not much I can do about resisting a 12oz ribeye and stack of macaroni and cheese. I’m only human after all. I do however, my best at purchasing only organic foods when they’re available, and try to stick to what I would consider a clean diet (non-processed foods). Veggies are at the top of my food pyramid, and aside from water and wine – a cold pressed juice or sparkling kombucha are my go-to drinks of choice. The biggest hurdle in sticking to a healthy diet – limit on time.

Sure when I cook I incorporate fresh greens, lean meats and a well balanced array of nutrients (don’t we all at least try to do that?). But working a full-time job, balancing the blog and a personal life makes health and fitness another task that’s difficult to always pencil in. That’s why I was excited when I friend of mine reached out and introduced Veestro.

Veestro is an organic, natural meal plan cooking up all plant-based, vegetarian meals pre-packed for health on the go. Before you scoff at frozen entrees, consider the alternative when you’re in a rush. Eating out? Bag of Ramen? Fast food? It’s not a pretty sight. What’s this 21 day challenge all about? When my friend reached out, she asked me if I’d be interested in trying out Veestro’s special nutrition program called 21 Days of Yes.

Curious about Veestro as an avid Blue Apron junkie, I decided to give it a go. What it’s about? The 21-day kickstart plan is a joint collaboration with Veestro, Holistic Health and Wellness Coach Kristin Wuhrman. Their goal is to deliver a short term program with long term results combining Veestro meals, supplemental menus, and weekly fitness and wellness challenges. The meals just came in last Friday, so here’s my introductory review!

About the program – I selected the 21 day kickstart plan #2, which includes 42 meals and 6 juices to be consumed during the 21-day challenge. They have the option of going gluten free, but I’m a wheat eater myself so regular was the way to go. When the box arrived, I was super excited. And let me tell you… it was a lot of food. A word of advice, if you’re going for the larger meal plan, make sure your freezer has plenty of vacant space. If you have an apartment or small living area, I’d recommend sticking with the 21 meal plan. The 42 meals did fit in my freezer, but let’s just say my ice maker is currently on my counter and I was able to give my freezer a much needed spring cleaning a little bit ahead of schedule to make some extra room.

There are 21 different prepared recipes in my kit (with two meals per recipe). So over the challenge period, I will be trying a wide array of Veestro’s organic plant food offerings. The variety was definitely part of the appeal, since many cleansing programs are pretty redundant. With Veestro, I won’t be eating kale salad every day for the next unforeseeable future. Meals include more complex combos such as three layer scramble, omelet primavera, adzuki spaghetti with veggie balls and golden chickpea stew. Since I’m just at the beginning of the program, I’ve only tried a few so far, but here’s my Veestro review for what I’ve tried so far.

My first meal was shared with my supportive boyfriend, and of course I had to try mine and his. He had the breakfast burrito, I had an omelet primavera. What I liked: They were super easy to prepare (just heat and serve). On a weekend, it’s nice to have the luxury of being lazy in the morning. We ate breakfast in bed with a hot cup of coffee as our first Veestro dining experience. Both meals were served with a side of red sauce and organic diced potatoes. I wasn’t sure if the sauce was intended for the main course or the potatoes, but we poured it over both for a warm, savory topping.

Next up: vegetarian lasagna for lunch. I cheated a bit and sprinkled on just a touch of parm (I’m a cheese addict). I was worried the 100% plant based Italian layers would be missing all the cheese – but I have to say it was quite good. Maybe next time I can skip the parm.

One of my favorite parts of the program is the juices. Recommended to freeze until consumption, they’re super fresh and don’t last long once you take them out (because they’re so good you drink them up right away). Hand Greenade a cute pun intended and my favorite flavor. There’s no water, sugar or preservatives – just the juice of organic kale, apples, broccoli, kiwi, celery and maquiladoras berry powder.

I’ll be traveling to India in just a few days so will have to pause the program, but already excited to kick off full speed ahead again as soon as I return. It’s by far the most convenient health program I’ve seen so far, without the starvation effect of juice-only cleanses. It’s a nice way to get in the habit of eating clean, and training yourself that meat isn’t always the only option. Though I’ll never give it up completely, there’s something to be said about the pure, natural diet of plants only – at least for 21 days.
