Heston Blumenthal’s gifted protégé, Ashley Palmer-Watts has been in the restaurant business since he was just 13 years old, rising to the ranks of Head Chef at The Fat Duck within four years.
Now heading up Dinner by Heston and executive chef for The Fat Duck Group, he talks to Elite TV’s Alanna Lawson about the restaurant receiving its second Michelin star in the 2014 guide, thanks to “careful planning, attention to detail and just a lot of hard work”.
Part of the industry for an impressive two decades, Palmer-Watts says of heading up the chefs at Dinner: “I want everyone to come here and feel like they’re learning, they’re enjoying it, they’re working in a great team, and when you get those things right, the end result will be the best it can be.”
