As a preview of his new signature restaurant set to open at the Fairmont Hamilton Princess Hotel in May 2015, renowned chef Marcus Samuelsson has announced a two-month pop-up restaurant, Samuelsson at HP, open from June 3 to August 3 at Bermuda’s pink palace.
The award-winning chef is the owner of Red Rooster Harlem and its Harlem Renaissance speakeasy-inspired sister venue, Ginny’s Supper Club. Samuelsson was also the guest chef for the Obama Administration’s first State Dinner.
Bringing with him chef de cuisine Leo Marino and chef de cuisine Justin Levine from Red Rooster in New York City, Samuelsson has planned a menu perfect for the location, saying, “I’m excited to create new flavors inspired by the rich, vibrant culture and history of Bermuda. From fresh-caught, local fish to an array of Caribbean and Portuguese ingredients and traditions, there is such a wealth of inspiration to bring to the table.”
The pop-up menu will feature unique dishes, including raw options such as Rockfish Crudo with pickled cherry tomato, radishes, and jalapeño oil; inspired main courses like Mustard-Crusted Lamb Rack with red wine and coffee-caramelized pearl onions; and desserts based on the seaside location, like Rum Cake with local strawberry and ginger salad.
Island-themed cocktails, including pitchers of Rum Rum Punch (white rum, dark rum, coconut water, pineapple juice, lime, and nutmeg), will be offered at the restaurant bar.

We are very excited to introduce the chef and his exceptional and unique cuisine to Bermuda. As plans for the new restaurant unfold, we look forward to sharing those details.”
Custom interiors by Parts and Labor Design, including Scandinavian-inspired wood furniture and nautical elements, make up the 42-seat dining room, as well as an outdoor space featuring a bar, dining area, and lounge terrace for up to 60 guests.
Samuelsson’s restaurant is part of a more than $90 million renovation of the hotel that includes rooms in the Poinciana wing of the hotel, an infinity pool, and a new marina with a harbor side restaurant, 1609.
With the restaurant, the hotel introduces the Culinary Escape Package: Accommodations in a newly renovated deluxe harbor view room, a signed copy of Marcus Samuelsson’s New York Times bestseller, Yes, Chef, dinner for two at Samuelsson at HP, and breakfast for two each morning. Rates for this package, valid June 1 through August 2, based upon availability, start at $779 per night with a minimum two-night stay.
