Having climbed the ranks through Gordon Ramsay’s Aubergine, Zafferano and L’Oranger, to support David Dempsey at Amaryllis and eventually become the first-ever female head chef at The Connaught Hotel; it’s been a long road for Hartnett, but one well travelled.
Now Chef Patron at Murano Restaurant, Hartnett says the dining experience should be equal parts about quality of food, service, and ambiance, without the solemnity of traditional fine dining.
“I don’t think you should have all this “shhhh,” as if you are in a church. I think it should be that you can just sit and laugh out loud, and have fun with your friends,” says Hartnett.
“And that’s what we encourage.”
