The expert mixologists at The Roof Garden’s Babylon Restaurant in Kensington show us how to make the Dark ‘n’ Foamy. Mixing science with tradition, this cocktail is a twist on the old ‘Dark ‘n’ Stormy’, with a sharp rum-based bottom and a sweet and spicy ginger beer foam on top.

Ingredients:
40ml Pampero White Rum
20ml Fresh Lime Juice
10ml Sugar Syrup
4 dashes Angostura Bitters
Instructions:
Shake the above and strain into a martini glass
Top with ginger beer foam*
Garnish with lime zest
*Ginger beer foam made from:
1x can of old Jamaica Ginger Beer
100ml Kraken Spiced Rum
Dash of Lime Juice
Gelling Agents – Cellulose Powder and Xantham Gum (both vegetarian)
Mix the above inside a cream whipper and charge with two bulbs of N2.
