Of all the subjects the South Florida Science Center and Aquarium’s ongoing program Science on Tap has tackled, April’s installment is probably the most appropriate. On April 28 beginning at 7 p.m., join Matt Stetson, head cidermaker at Accomplice Brewery and Ciderworks, at the Brass Tap in Boynton Beach for a discussion about the Chemistry of Alcohol.
Opening its West Palm taproom in November, Accomplice is the only cidery in Palm Beach County, giving South Florida an added dynamic when it comes to the brewing options—not to mention a gluten free pick for those with a gluten intolerance. Hailing from a wine background, Stetson’s passion for making some adult beverages has made him a jack-of-all-trades, not just brewing beer and cider, but also dabbling in mead, sake, wine, and even sodas, making him the perfect candidate to discuss how chemistry is used to create alcohol in the controlled environment of a cidery/brewery.
During this month’s Science on Tap, Stetson will pour some cold ones and discuss how brewers harness the power of one of life’s simplest organisms—yeast—to consume sugar, producing alcohol and carbon dioxide as a byproduct. A process man has honed for thousands of years, now guests can sit in the air-conditioned comfort of one of Boynton Beach’s best craft beer haunts and learn about the process, ask a few questions, and leave a more informed drinker.
