The drinks in this series are designed to be made at home, so we suggest you grab an extra ice bucket and a highball glass … or two.
For our second cocktail, John Nugent of Lily and Bloom gives us the perfect Tommy’s Margarita recipe to refresh us this summer.
Ingredients:
Pineapple Margarita
30ml Ocho Tequila Blanco
15ml Alipus Mescal
15ml agave syrup (equal parts water & agave nectar)
15ml pineapple juice
20ml lime juice
Pineapple garnish
Method:
- Give it a shake
- Pour all contents into glass
- Add a few more ice cubes
- Add a sexy pineapple garnish
About the drink:
Concocted in the early 1990s by Mexican restaurant bar and owner – Julio Bermejo – this drink has won their spot a title of “premier tequila bar on earth”. Bermejo, known to be a legend for his command of the liquor, and knowledge of tequila – names this glorious’ cocktail after Tommy Bermejo, his father.
John tells us, “I find that Agave and summer are synonymous with each other. Nothing is easier than making a Tommy’s margarita (tequila, agave nectar, and fresh lime) or variations of which. I like to give mine a smoky, tropical kick by adding mescal and pineapple juice.”
At Lily & Bloom, they make a variation of a margarita, in which they add cucumber, elderflower and spicy shrub bitters.
