THE CAVIAR MOJITO

What is your signature drink? You need two: one for spring and one for fall. Today, using my skills as a bartender and after trying and tasting many versions (see above image), I finally created the Caviar Mojito, a refined signature drink, to keep you cool during the warmer months:

Ingredients:
* 1.5 oz Mount Gay Special Reserve or Silver Eclipse Rum
* 6 two-inch Citrus Caviar/Finger Limes or 1/2 Organic Lime
* 1/2 cup Fresh Mint/Mentha Leaves
* 1 tablespoon Barbados/Muscovado Sugar
* Fever Tree Club Soda
* Filtered or Spring Water Ice Cubes
* Sugar Cane, Mint Leaf Sprig, and Lime Wedge for garnish
* Spiegelau 13-ounce Classic Bar Longdrink Glass, Bar Spoon, Bamboo Cutting Board, Wusthof Paring Knife, Napkin

Directions:
1. Separate mint leaves from stems, loosely measure 1/2 cup, and put in glass
2. Cut ends off each citrus caviar and slice in half horizontally or cut up lime into four wedges
3. Squeeze pearls out of slices into longdrink glass, along with squeezed slices
4. Muddle mint and lime very lightly to release oil and juice
5. Add sugar, which will eventually float to bottom
6. Fill with ice to rim
7. Add rum
8. Top off with soda
9. Stir with bar spoon
10. Garnish with sugar cane, mint leaf sprig, and lime wedge
11. Place glass on napkin, tell savionaire to bite citrus caviar pearls as they enter mouth, and charge $17
