Is there a bigger challenge than having to curate a menu that encapsulates the culture and feel of New York’s MoMA? Well that’s exactly what Abram Bissell came up against when it was announced he would be responsible for heading up the kitchen at The Modern.
Kitted out with a state-of-the-art kitchen, The Modern fits the MoMA down to a tee. Taking influence from his time at The NoMad and Eleven Madison Park, Bissell’s menu is simple yet innovative. Focusing on using the finest ingredients, Bissell uses color to amazing effect, contrasting his beautiful and bright food against bright white plates, making each dish fittingly feel like a piece of art.
