Vue de monde was first opened by Australian chef Shannon Bennett in 2000. Over the last two decades, the cuisine has morphed from its original, classical European roots to a light-handed approach to cuisine.
Hugh Allen, who replaced Justin James as executive chef in February 2019, has created a menu that proudly celebrates seasonal Australian produce, including Vegemite!
The setting makes an impression too, with Vue de Monde located on the 55th floor of Melbourne’s iconic Rialto building.
