Michelin Guide 2020: The Stars in Hong Kong and Macau Announced

The results are in. And with it, stars have been awarded, retained and in some cases, dropped across Hong Kong and Macau. Taking place in the City of Dreams in Macau, talented chefs from the best restaurants across the region gathered for the announcement of the 12th edition of the annual Michelin Guide 2020.

Established since 2009, the Michelin Guide Hong Kong Macau is one of Michelin's first forays in Asia and now, after one year on the ground, Michelin inspectors have compiled their lists of one, two and three Michelin-starred restaurants based on five criteria. This includes 1) quality of the ingredients used, 2) mastery of flavour and cooking techniques, 3) the personality of the chef in their cuisine, 4) value for money and 5) consistency between visits.

Announced today on Wednesday 17th December by International Director of the Michelin Guides, Gwendal Poullennec, the awards saw a total of 90 restaurants in Hong Kong (70) and Macau (20) receiving the coveted accolade.

There wasn't much movement in the lists for the highest accolade and remained very similar to 2019 with 7 in Hong Kong and 3 in Macau earning three stars. However, we did see Chef Alvin Leung's Bo Innovation drop from three to two, while, Forum, mostly known for their signature Ah Yat braised abalone jumped from two stars to three. Sushi Shikon also maintained its three star status, though technically is a 'new entry' thanks to its new location in the The Landmark Mandarin Oriental.

The results also saw some promotions with 3 new two-star additions. This includes Hong Kong's contemporary French restaurant Arbor which, after debuting on the guide last year with one star, claims its second star thanks to Chef Eric Räty's culinary direction which combines his sophisticated techniques in French cuisine and use of premium Japanese ingredients. Meanwhile in Macau, Cantonese fine dining restaurant Wing Lei in Wynn Macau was awarded its second star, and Wynn Palace's Sichuan Moon made its debut with two stars. The modern Sichuan restaurant is fronted by celebrated Taiwanese chef André Chiang and run by Malaysian Executive chef Zor Tan.

Michelin's 2020 selection of the best restaurants also saw 61 establishments emerge with one star, including 11 new Hong Kong entries. The results reflected some inklings that we had ourselves here at Prestige, with some of our favourite new restaurants claiming a star. This included French restaurant L'Envol at The St Regis Hong Kong with Olivier Elzer at the helm, Julien Royer's new French restaurant Louise, and Roganic by acclaimed chef Simon Rogan. Other highlighted wins include David Thompson's Thai restaurant Aaharn, Chinese restaurant Rùn, and Japanese restaurants Ryota Kappou Modern and Zest by Konichi.

Speaking highly of all restaurants and chefs involved, Poullennec commented that, “Both cities have their own identity, but are quite similar when it comes to the quality of the cuisine, which is world class.” And he wasn't wrong. The Irish style restaurant is offering both a three-course and a four-course festive menus.  It starts with a choice of hearty parsnip & apple broth, the slow-cooked Spanish octopus and roasted sweet potato rounds. The indulgence continues with a selection of six exquisitely crafted main courses to choose from, including a traditional oven-baked turkey breast with sage and chestnut stuffing, slow-cooked beef with red wine and chocolate sauce, apple-wood smoked salmon fillet, US prime rib-eye steak, Boston lobster risotto and a vegetarian option of eggplant rolled with ricotta cheese and Hungry Planet crabmeat. Complete your meal with their festive favourite rustic Christmas pudding with rum sauce, warm coconut fudge brownie with vanilla ice cream or a red fruit lemon tart, which will sure to leave you more than satisfied.

Pivo Czech Bar

Pivo Czech Bar brings traditional flavours and Bohemian classics from Central Europe to our local dining scene like no other before. Their chef has crafted a Christmas Eve and New Year’s Eve 3-course Set Dinner. To start, you’ll be able to choose from either the refreshing Sesame tuna, avocado, pomegranate & kohlrabi salad or the creamy Chestnut soup with cranberry and Smoked Turkey Toast as an appetizer. Moving onto the mains, guests can choose either the fish or steak option. The fish is a Pan-fried grouper with celeriac purée, spiced beetroot, and glazed fennel. While the steak is a flavourful and tender Black Angus striploin with Honey-sweet potatoes, brussels sprout and red wine sauce. Topping off the meal is the Mascarpone mousse with white chocolate chips and dark chocolate crumble.

Stormies

For Christmas Eve and New Year’s Eve, Stormies is offering a 3-course Set Dinner. To whet the appetite, the meal begins with a Foie gras terrine with ruby port, pear, and croutons or a warm and hearty Sweet potato bacon soup with Crème Fraiche and Cranberry. Following the appetiser, guests can select from the two options, including the Seafood paella with prawns, clams, mussels, peas and saffron and the Grilled USDA ribeye steak with a Garden salad, Truffle Fries and Café de Paris butter. The dinner ends on a sweet note with the restaurant's scrumptious Apple Strudel with Vanilla Gelato.

Cafe Deco Pizzeria 

 

For more of an Italian twist for the holidays, Cafe Deco Pizzeria is offering an inventive menu including the already made popular Christmas Turkey Pizza. This seasonal pizza is only available for the month of December. Taking the best bits of Christmas and to create a reinvented Italian classic, find toppings such as smoked turkey breast, pancetta, gammon ham, mozzarella, brussels sprouts and roasted chestnuts generously topped on handmade pizza dough. The signature Roasted Octopus is also a popular choice, coated in seasoned butter and cooked in a high-heat oven to achieve a crispy exterior with a soft chewy interior.

Mango Tree

If turkey, ham, and stuffing is not your thing, head to Mango Tree for an Asian twist. The Thai-style restaurant uses the freshest ingredients, organic herbs, and spices, to serve up Braised fresh abalone, Crispy soft shell crab salad, Yellow curry fried noodles with lobster, Char-grilled US beef tenderloin with Jumbo river prawns and Sticky rice with mango.

Maze Grill Offers a Sparkling New Year’s Eve Menu

Gordon Ramsay's contemporary steakhouse maze Grill is gearing up for the new year with a menu that is sure to set off fireworks. In fact, their exclusive New Year's Eve menu will do exactly that, and offers a delectable four-course dinner alongside panoramic views of the harbour. Thereafter, there will be an alfresco party to usher in the New Year, with an international DJ playing on the adjoining terrace.

To start the dinner, canapés will be served in the form of a rich buttery Perigord truffle and parmesan sable. This is followed by the crowd-pleasing Special confit duck and watermelon salad, with luscious pieces of the game meat brightened by fresh watermelon. A fish course features a Yellowfin tuna tartare served with avocado, zingy ponzu and crispy shallots. Choice is offered for the main course and there are three options in total; including the iconic Gordon Ramsay dish of Beef Wellington, which comes with a sumptuous bone marrow mashed potato and peppercorn sauce. Or guests can choose between the smoky Grilled native lobster slathered in smoked shiso butter or the Wild mushroom risotto dressed decadently in aged parmesan and winter truffles, too. Not forgetting the sweets, dessert is the finale to end with and is served as a velvety Dark chocolate and passion fruit crémeux, coconut ice cream and candied walnuts.

There will be two seatings available for New Year's Eve with time slots for an earlier dinner at 6:00pm to 8:00pm (priced at HK$788 +10%) and a later dinner from 8:30pm until late (at HK$1,188+10%) to include entry to the party also. For those only interested in the New Year's Eve party on the terrace, there is also an entry option that is offered with a complimentary drink (HK$250).
