Today's #sakefacts are all about the Shishu Nama (新酒生) releases. Shishu Nama means ‘New Release, Unpasterized Sake’. Sake labelled this way are among the first sake of the year to be pressed, bottled and shipped in their raw, unpasteurized state. Usually, these bottles only make it as far as the local market or maybe Tokyo.
