The Old Man
As Asia's number one bar (according to Asia's 50 Best Bars list), The Old Man is considered the hero of Hong Kong's bar scene, and for good reason. The Ernest Hemmingway-inspired speakeasy offers some of the best cocktails we've tried, thanks to top mixologist Agung Prabowo. My cocktail of choice --A Moveable Feast #1964-- is resplendent with flavours of the sea with consommĂŠ-esque characteristics I could never say no to. The bar itself is an intimate space with handsome qualities throughout.Â

DarkSide
Not only was the Rosewood one of Hong Kongâs top luxury hotel openings of 2019, but they also opened one of the cityâs best new bars; DarkSide. An homage to Kowloonâs fondly-known moniker, the bar also dedicates itself to a selection of dark spirits including some rather rare labels of rum, whiskey, calvados, cognac and more. In addition, the concise but stellar cocktail list goes down extremely well with the live jazz sessions. There are also vintage cigars and an array of dark chocolates and snacks to pair with your beverage of choice.

Tell Camellia
Inspired by our beloved beverages of tea and cocktails, itâs no wonder we frequent this somewhat hidden bar. Tucked away in Centralâs H Code building, Tell Camellia is the drinking den that satisfies both cravings. Itâs also headed by bartender and industry experts Sandeep Hathiramani and Gagan Gurung, so you can be sure that you are in safe hands. Meanwhile the menu showcases a rotating list of Teatails and T&Tonics, which either blends tea in the cocktails or uses tea redistilled with gin.

 The St. Regis Bar
Another luxury hotel The St. Regis Hong Kong opened in 2019, there was one particular thing â other than the stunning AndrĂŠ Fu-designed suites â we were all excited to visit; The St. Regis Bar. Thankfully, it did not disappoint. Quite the contrary, it exceeded many of our expectations and offered us some solid, and rather spirited, cocktails that we were happy to sip on. The St. Regisâ signature service is also apparent and makes for an indulgent evening of cocktail drinking.

The Diplomat
We are definitely heading back to this speakeasy pub concept by acclaimed mixologist John Nugent for all the fun and flavourful cocktails they offer, not to mention the impressive pub grub we sampled too. The space, which feels like a hidden gem, is worth visiting for a pre/post/or any time drink with favourites including the signature pandan-infused Tarling cocktail, clarified English milk punch and super indulgent Irish coffee.

Tell Camellia, Hong Kongâs First Tea-Inspired Cocktail Bar, Opens in Central
There's nothing quite like sipping a nicely brewed cup of tea or, depending on your mood, a refreshing cocktail. Fortunately, Tell Camellia hits both marks. The newly opened cocktail bar is Hong Kong's first tea-inspired spot for tipples, and it can be found tucked away inside Central's H Code building, which has seen a number of wine and dine openings already this year. It's headed by award-winning bar team and co-founders Sandeep Hathiramani and Gagan Gurung, whom you may also recognise from the Bar Awards HK & Macau and working behind Fang Fang's bar, respectively.
Tell Camellia presents a unique drinking experience based on the marriage of Hong Kong's beloved beverages: tea and cocktails. It's also named after the tea-producing shrubs known as Camellias, whose leaves produce white, green, yellow and black teas amongst others.

What about the cocktails? The bar menu is divided into two parts: Teatails and T&Tonics, the first of which features cocktails named after the origin of the tea blend used, while the second section consists of herbal and tisane teas redistilled with gin. Meanwhile, cocktail ingredients include tea leaves sourced from the likes of Japan, Kenya, Turkey, Sri Lanka and Australia, which undergo experimental techniques to convey some rather unique flavours.

Some highlighted signatures to try include Australia, made with an earthy tea cultivated in the northern wilderness regions of Queensland, the Aussie chocolate classic Tim Tams, clarified strawberry, blue cheese and whiskey before it's garnished with koala munches. Japan is another suggested cocktail, which is full of umami and served in a floating wooden cup with re-distilled and evaporated matcha tea blended with shochu; it's then mingled with pumpkin seeds, mint, fermented soybeans, and dusted with rare plankton and seaweed. From the T&Tonic side of things, G&T lovers can taste quirky renditions including Mango & Strawberry, Italian Almonds & Truffle, and Chocolate & Coconut.
Set within a contemporary space that features natural greens and woods, the new tea-driven cocktail bar feels akin to a tea house but is jazzed up with vintage lightbulbs and plush leather seating. If you're looking for your new favourite cocktail spot, you know where to head.
