First Look: Pirata Group Introduces The Sixteenth, a Restaurant Collective in Quarry Bay

The Sixteenth, an 18,000 square feet, 400-seater destination, is the largest multi-concept restaurant development on the eastern corridor, conceived by co-founder Manuel Palacio, and designed in-house by Pirata Group's Archie Haig and team.

"No one can travel, so everyone in Hong Kong is craving new experiences now," declares Manuel Palacio, co-founder of Pirata Group. "When we first saw the venue, we realised that we were in a position to push the envelope of dining experiences for consumers in the city. So that's what we did."

La Favorita

The first restaurant concept you'll encounter is La Favorita, a theatrical trattoria that pays homage to Palacio's first experience in an Italian restaurant, recalling the flamboyance of Italian opera houses in the 1960s.

"We have these lovely drapes, the graphic carpets and two private rooms for a more intimate experience," says Archie Haig, Senior Interior Designer.

"Expect an elevated dining experience that's a bit more complete than, say, Pici," adds Andrea Viglione. True to his word, the menu here features dishes that's a bit more bougie — handmade Lobster Tagliatelle, Cheese Wheel al Tartufo and, of course, a 1kg Bistecca alla Fiorentina.

Honjokko

"We're calling this our Sushi Club," says Dan Segall, Culinary Director of the two Japanese concepts. "This is the Honjo menu expanded: We'll have a full omakase experience, but aside from that, expect lots of delicate, artful bites, grilled items and more."

Look up and you'll notice the delicate Japanese umbrella — wagasa — inspired ceiling features, hand painted screens by the local team at Elsa Jeandedieu Studio, and tables covered in luxurious ostrich hide. You'll find a cosy bar tucked away in the corner, as well as a private room that seats 24, ideal for more exclusive birthday or family events.

Tempo Tempo, their vast terrazza, sets the ideal scene for il dolce far niente — the joy of doing nothing. What you get is just that: A leafy, lush al fresco slice of paradise set amidst the towering cityscape; a verdant garden lined with lemon trees to boot.

"We wanted to create a vibe here that is great for not only after-meal drinks, but also to bring a little more to your after-work experience," says Haig.

TMK Funk & Rolls

Finally, at the end of the main corridor, you'll find the soulful third iteration of the music-inspired temakeria, TMK — this time with a distinct focus on funk. Designed with references and giving tribute to the recording studios of funk and soul legends such as James Brown and Marvin Gaye, the interiors were meticulously curated to honour the greats of this rhythmic genre.

TMK Funk & Rolls is a fun, casual concept that marries Japanese-American cuisine with a decidedly kanpei attitude to while the night away. Menu items include classic handrolls, temakis, nori bowls and, of course, sushi and sashimi.


Why the name, you might ask?

"It's not because it's our 16th outlet — which I know is what a lot of people assume. We're actually way past that number," laughs Palacio. "It's actually a geographical reference. The name is meant to pay homage to the districts in Hong Kong: Of the 18 districts in the city, the Eastern district is the 16th."

The Sixteenth is currently in soft opening, with the grand opening date set in mid-November.

The pairing takes inspiration from the holiday and includes a cocktail served in a traditional paper lantern, with a dim sum steamer holding a white lotus, custard and date jam macaron. The guys at Pirata Group are celebrating their fifth anniversary with a series of festivities including a special four hands dinner by two of their top chefs: chef Son Pham of Madame Ching and chef Stephan Joubery of TokyoLima. The menu boasts signature dishes such as Kabocha – Mi – Hummas and Ccharred cabbage, home cured sashimi, pork neck katsu in a curry tomato sauce, and ponzu honey duck with pickled shallots. In just six short months since the opening of Roganic and Aulis, chef Simon Rogan has proved to be a force to be reckoned with in the Hong Kong dining scene. Tate Dining Room x Wing Lei Palace: A Taste of Autumn Stories

Chef Vicky Lau has made her name as one of Asia’s best female chefs with her tasting menu in the form of “edible stories” at Tate Dining Room. This September, she will focus on a special seasonal dinner in partnership with chef Tam Kwok Fung across the water at Wing Lei Palace in Macau. The 8-course meal merges the two chefs' culinary expertise in French-Chinese and traditional Chinese cuisine to express an autumnal narrative that showcases rare and seasonal ingredients.

The Sühring brothers of the eponymous two-Michelin-starred restaurant in Bangkok will be treating Hongkongers to a taste of their inventive German cuisine at Mandarin Oriental this month. Guests will experience an intimate 13-course dinner inspired by the brothers’ childhood memories, including beer garden specialties such as Leberkäse, the Swabian favourite Spätzle egg noodles with black truffles, and notable desserts like grandma’s secret-recipe eggnog.

Following the success of their previous partnership earlier this year, chefs Edgard Sanuy and Sang Jeong from Pica Pica and Ichu Peru, respectively, are joining together again for a very special tapas menu. The two chefs will be showcasing four dishes, each representative of their culinary region of expertise, binding the vibrant flavours of Spain and Peru. Look forward to iconic plates like Iberico pork morcilla with baby squid in ink sauce, slow cooked Spanish Black Angus beef rib with romesco and pickled onions, Peruvian pita bread with soft shell crab and aji Amarillo and Octopus with leek purĂŠe and crispy leek. The tapas are designed to be ordered Ă  la carte so guests have the option of selecting from the permanent menu as well.

Congratulations are in order as The Mira Hong Kong turns 10 this season. To celebrate, Whisk invites farm to table concept EphernitĂŠ of Taipei and one-Michelin-star Thai/French restaurant Le Du of Bangkok for a special four-hands menu. Both chefs will each present four dishes, paying homage to the passage of time and reflecting upon meaningful milestones of their careers. The menu has been carefully designed to achieve a perfect balance and showcase the modern techniques of Asian and French cooking.

You don’t need to travel all the way to Spain to try the cuisine of Michelin-starred restaurant Sucede. This month, chef Miguel Ángel Mayor pays Hong Kong a visit for the first time to guest chef at La Rambla and present his award-winning modern Valencian menu. Guests can expect seasonal signature dishes picked from various historical eras and inspired by traditional Roman-style banquets. Prepared to be wowed by fan favourites including Spanish sea cucumber with spinach and pork terrine, and beef loin with cured beef tongue and lentil caviar.

Haku x La Maison de la Nature Goh

At the end of the month, chef Takeshi “Goh” Fukuyama will be welcomed by chef Agustin Balbi of Haku for a special 9-course degustation journey. This collaboration is unique in that both chefs share a background with international culinary training and a passion for the highest-quality ingredients from Japan. Destined to be a night of pure indulgence, the menu features delicate dishes such as saba and caviar, foie gras with persimmon, grilled octopus with konbu, wagyu, and Caldoso-style chicken with black truffle. A wine pairing option is also available to complement the meal.

Where to Try Art-Inspired Menus this Month

As Hong Kong’s Art Month ensues, we're seeing all sorts of creativity spilling out across the city and onto our plates. With art-inspired menus, dishes and cocktails on offer, there's something for everyone to celebrate the arty season. So if gallery hopping isn't for you, here’s a list of 9 other cool art-related things to eat or drink this month. 

 

Ozone, The Ritz-Carlton

If drinkable art is your thing, you can head on up to The Ritz-Carlton’s Ozone, the world’s highest bar, to sample cocktails and tapas inspired by the Bauhaus movement, which combined construction and fine arts in the early 20th century. Created by culinary and bar manager Oscar Mena, bar-goers can sip on artsy cocktails that have been inspired by Bauhaus maestros László Moholy-Nagy, Josef Albers, and Paul Klee. What’s more, artisan mixologist and Asia’s Monkey 47 brand ambassador Zachary Connor de Git will be guest bartending for one night only (Friday, 29 March) with some of his own signature creations.

CÉ LA VI

Art lovers rejoice! You can now eat, drink and simultaneously experience art at CÉ LA VI. A tasting menu featuring six colourful dishes will set the tone with dishes such as oyster & botan ebi to start, and a vibrant beet & raspberry mousse to finish. Wash it down with their exclusive art cocktail, Panthère Cobblers, inspired by French ‘Born Wild’ pop-artist Richard Orlinksi, all the while enjoying the collection of sculptures, courtesy of Opera Gallery, displayed across The Lounge, Sky Deck and restaurant. To end the month on an artistic high, CÉ LA VI will also be hosting a closing party featuring a live performance by dance alchemy production group I AM.

Get in the mood for artistry at The Peninsula’s 28th floor restaurant, Felix, and enjoy the Five Senses Art Experience menu by Chef de Cuisine Juan Gomez. Created to please all your senses, dishes like crispy king crab pillows will indulge hearing, whilst chargrilled Iberian pork pluma will excite your sense of smell and pan-fried foie gras with glazed plums will tickle your taste buds. But if that’s not enough art for you, The Peninsula -- being the official hotel partner of Art Basel Hong Kong — will also launch ‘Art in Resonance’, a multi-year art program that starts 26 March, in which the hotel will play host to newly commissioned, immersive installations by contemporary artists across the globe.

Back by popular demand (for the fifth consecutive year now), is Chef Oliver Li’s ingredient-driven, street art-inspired menu. Reflecting upon UK-born, HK-bred visual artist Szabotage’s pop-up exhibition “Reflections”, the six-course menu incorporates urban and pop culture in its dishes -- including the signature graffiti-style Koi patterns. Along with the meal comes four pop-artsy tipples that also pay tribute to the street art influence.

Dr. Fern's Gin Parlour

The artisanal gin bar tucked in the basement of The Landmark is a favourite most days, but during Art Month, the place is especially popular with bartender Gerry Olino’s art-inspired cocktails. The first of his creations is Flowers in the Snow -- a concoction of infused gin, honey, cream, egg white, soda and local jasmine tea -- instilled by artist Robert Tracy’s mysterious flower painting. The second drink is a must-order simply for its gorgeous presentation; The Blossom is derived from a simple seed, given the love and water needed to transform into beautiful and colourful life, and is made from Whitley Neill Quince Gin, London Orange & Elderflower and edible flowers.

Michelin-starred chef Robin Zavou celebrates Art Month this year with his Palatable Art menu. This time, he’s paired up with artist Konstantin Bessmertny and Benjamin Sigg of Art Advisory to put forth a four-course dinner menu. Each dish is a true work of art as it mirrors, complements, or exudes the feelings and ideas intended by the artist, and now, the chef as well. Special mentions include the caviar, leek and cauliflower starter inspired by Ancient Régime, and the Wagyu beef served with bark and smoked at the table to bring out the five elements, reflective of the piece with the same title by Chinese artist Ji Dachun.

Mumm Harbourfront Party 

27 March

Back for the fourth year now, Mumm Champagne returns to co-host one of Art Month’s biggest celebrations right at Hong Kong’s Central Harbourfront Event Space with Art Central. This VIP party is also the debut of Mumm Grand Cordon Stellar – the first Champagne bottle designed specifically for space travel. Although you may not have any plans to venture past our planet anytime soon, you are however guaranteed an evening that is out of this world, with free-flow drinks and international DJ performances.

Sunday afternoons just got better with Four Season’s new Art Frenzy Afternoon Tea set offering. Led by Executive Pastry Chef, Ringo Chan, the interactive tea buffet is an expression of the chef’s creativity in the form of sweet delights. Expect artistic creations in his interpretation of urban Hong Kong, bird cages found in the old parts of Kowloon, and paint tubes inspired by the city’s modern street art. The tea set is available from 2pm to 4pm, or 4:15pm to 6pm.
