eating clean for 21 days with the organic, vegan Veestro challenge
Disclaimer: I’m not by any means a vegan, and though I try to eat healthy for the most part, there’s not much I can do about resisting a 12oz ribeye and stack of macaroni and cheese. I’m only human after all. I do however, my best at purchasing only organic foods when they’re available, and try to stick to what I would consider a clean diet (non-processed foods). Veggies are at the top of my food pyramid, and aside from water and wine – a cold pressed juice or sparkling kombucha are my go-to drinks of choice. The biggest hurdle in sticking to a healthy diet – limit on time. Sure when I cook I incorporate fresh greens, lean meats and a well balanced array of nutrients (don’t we all at least try to do that?). But working a full-time job, balancing the blog and a personal life makes health and fitness another task that’s difficult to always pencil in. Just returned from a week in NYC and off to VA beach for a weekend getaway… the hustle has my mother dearest reminding me that a healthy body and happy mind keep illness away – take care of both to keep the doctor away! No life support called in yet – so looks like that department is going pretty well so far. Keeping things simple and following a happy, logical outlook makes it simple to keep the head held high .
