In a new seasonal menu, titled 'Castellana Tour of Italy', a series of dishes are presented to celebrate Piedmont cuisine in a new light; many of which combine top ingredients sourced from around the world. On this occasion, we sampled Tagliatelle ai ricci di mare which puts together homemade tagliatelle, cooked perfectly al dente, with Japanese sea urchin enhanced by a squeeze of fresh lime and spicy olive oil, cherry tomatoes and basil. The result is luscious and creamy, but not overly rich: an indulgent pasta dish that was enjoyable to the last bite.

Arbor

It's always a joy to revisit two-Michelin-starred restaurant Arbor and savour chef Eric Räty's innovative cuisine. This season brought with it a wealth of dishes that once again, honours the natural flavours of its produce. Case in point is the Roasted Brittany pigeon. In a wonderfully flavourful dish, the breast meat is crusted with Okinawan sugar and Sichuan peppercorns. It's then paired with an assortment of mushrooms which include a peppered onion chutney-stuffed morel, meaty maitake and its puree, seaweed soy chutney with truffle, and a pigeon jus infused with fermented enoki mushroom juice. It's also served with a pigeon leg on-the-bone and pickled burdock.

If you have yet to visit one-Michelin-starred Restaurant Petrus at Island Shangri-La since Chef Uwe Opocensky joined, now is the time to do so. The seasonal menu, also driven by Head Chef Bjoern Alexander, is ripe with the very best ingredients of the season and focuses on organic produce too. The new favourite is the Lobster aged in bone marrow on rice served with a broad bean chawanmushi. Warming and moreish, the dish holds a balance of savoury and sweet notes from the seafood with touches of freshness and texture throughout.

The Landmark Mandarin Oriental's wine and sake led restaurant does it again with their classic menu accented with modernity. Take the beef tartare; the popular appetiser that uses fresh beef with both crunchy and creamy components. At Somm, the beef used is the free-range and grass-fed Polmard heritage cattle, known for its deep and rich flavours. It's paired with the piquancy of shishito peppers, which add a slight kick, before it's grounded with velvety shiso mayonnaise. It's best enjoyed on top of sourdough shavings for added crunch.

Tin Lung Heen

During a recent lunch at The Ritz-Carlton's two-Michelin-starred Cantonese restaurant Tin Lung Heen, we enjoyed the dim sum and barbecued Iberian pork with honey signatures. However, the highlight this time was the unassuming double boiled soup. Filled with the rich essence of chicken and nourishing fish maw, the soul-soothing soup receives the maximum extraction of flavour from the sweet and aromatic baby coconut. A must order if you enjoy soups, and one worth going up to the 102nd floor for.

To say that the new seasonal dishes at Simon Rogan's development kitchen are stunning is an understatement. The new menus, led by Sous Chef Karl Steele, showcase some fantastic produce from local growers and suppliers in the region, so it's as fresh as you can get it. A 10-course spring menu is available for dinner, and a 9-course menu is offered at lunch on Saturdays. In both menus, you'll find some of Aulis' newest creations including a 42-day aged beef, and dishes like the king oyster and fermented black garlic, New Territories tomatoes with the sweetest king crab, and my new favourite: Stout sourdough and whipped mushroom. Think airy umami-packed mushroom parfait spread liberally on a warm, crunchy and beautifully fragrant slice of sourdough bread. This is the type of bread you do not want to miss to save room for other dishes.

La Rambla by Catalunya

The new Sunday Brunch at La Rambla by Catalunya has been designed to whisk you away to a Spanish mercados gastronómicos (or gourmet food market) without ever having to leave Hong Kong. The main purpose of course, is to provide a safer environment for guests, so that dishes that were previously available at their buffet is instead served directly at your table. This includes all the tapas, salads, cold appetisers and charcuterie. Other elements such as the Butcher's Corner and Seafood Market are there for guests to choose the produce at before the chef grills away. One item definitely worth ordering is the 3XL Butterflied Spanish red prawn, which you can choose to have with salsa verde, chimichurri or other sauces.

The Diplomat

If you have yet to discover this speakeasy pub concept by acclaimed mixologist John Nugent, you'll want to keep it in your books for all the fun and flavourful cocktails they have on offer. However, it's not just the drinks that will pull you in, as the pub grub is likely to impress you just as much. The menu of snacks and hot dishes feature some familiar and hearty items including Black truffle mac & cheese, and the already famous Diplomat Burger, but it's the Suckling pig cubano that delighted with its smoky, succulent meat and crispy skin, cut through with mouth-puckering pickles and mustard.

Duddell's

If you're in the 'eat dim sum any time of the day' camp, then I think we can be friends. And since we're friends now, we can enjoy Duddell's new all-day set menu which features an assortment of their signature dim sum together. Highlights include the classic 12-fold Shrimp dumpling, Pork and shrimp dumpling with conpoy, Truffle fried pork dumpling and of course, my all time favourite, the Crispy barbecued pork bun. So satisfying, I think I'll go with, or without you.

For Easter, Italian fine dining restaurant Castellana is presenting a limited menu to celebrate the occasion. The seven-course menu is scrumptious from start to finish, but the true star of the show is the Slow cooked milk fed lamb leg in Piedmont style. The meat is beautifully cooked to absolute perfection with very minimal gaminess, extreme tenderness (think hot knife cutting through butter) and is artfully paired with crispy artichoke for a balance in flavours and textures. It's best enjoyed with a glass of Piedmont red recommended by their expert sommelier.

Rubia

One of the newest restaurants in town is Spanish restaurant, Rubia. Pioneered by the team behind tapas bar Pica Pica, Rubia is also true to its roots in Spanish cuisine with a key focus on hand-reared beef. The Rubia Gallega boneless ribeye is what a perfect steak should be – flavourful and juicy – and comes with a side of sweet Spanish Piquillo peppers, hand-cut Patatas frites, and house salad in mustard dressing. Apart from the mouthwatering beef that one must order, the Black fideos cooked in lobster stock with Carabinero and aioli is also worth a special mention. The saucy, briny seafood dish if full of flavour, and comes with the final flourish of sweet buttery roe from the prawn head for that extra hit of umami.

The spacious 3,000 sq. ft. restaurant, which opened in collaboration with Chef Marco Sacco of Italy’s two Michelin-starred Piccolo Lago, is located on the tenth floor of the modern Cubus building. Seating a total of fifty guests, the space is wrapped in warm wood fixtures filled with the fine Italian wine that make up the wine list. This is complemented by soft gold, beige tones, leather furnishings and pops of colourful art to accentuate the contemporary surroundings. From dates to business meetings, or celebrations and group meals, Castellana provides a versatile space for all occasions and welcomes guests to step into a corner of Piedmont by way of Hong Kong's retail district.

A main dining room, which seats 20 guests, as well as two 16-seat private rooms, are available for events and can expand to the bar which serves up to six guests at a time. All of which can be tweaked and tailored to your specific needs. From the room configuration to the menu items, cocktails and canapés, Castellana will design accordingly. Upon entry, Castellana can greets guests with a selection of canapés and cocktails; from the classic to more distinctive drinks based on -- you guessed it -- the jewel of Northern Italy: truffles. Whether it's a punchy truffle gin-based martini, or something a little more innovative such as Ms. Truffle, which uses a blend of Frangelico, Bitter Truth Chocolate, lemon and pineapple, Castellana can mix it up for you. However, oenophiles need not despair as the 300+ bottle wine collection is just as impressive with full-bodied wines characteristic of Piedmont on the menu. Castellana Brings Northern Italian Flavours and Piedmont’s Best Truffles to Hong Kong

It’s not often that you find a gem like Castellana, at least not in Causeway Bay. Offering a start contrast to the flood of traffic and people, this new fine-dining Italian restaurant sits on the 10th floor of Cubus and feels like a retreat from the chaos on the streets below. The interiors are attractive with dark wood, plush leather seats, white table linens and floor-to-ceiling windows allowing natural light to flood in. Elsewhere, the dividers between the semi-private room are cleverly designed to double up as wine racks with glass panels that also let light in, making the main dining area feel airy and spacious. It all takes you away from the city -- while still being in the city.

Marco Sacco, of two Michelin-starred restaurant Piccolo Lago in Italy, is Castellana’s chief menu consultant. He brings international culinary experience paired with love for his native regional cuisine to offer a unique taste of Piedmont in Hong Kong. Often referred to as the most progressive culinary region in Italy, Piedmont not only holds classics that are influenced by neighbouring France and Switzerland, but it's also a prime location -- what with its perfect climate and conditions -- for wine and truffles.

According to the menu, “Because Piedmont is considered the birthplace of truffles, all dishes on the menu can be enhanced with shaved truffles upon request”. That explains the table side truffle accompanied by a grater. Guests are welcomed and encouraged to slice fresh truffles to their heart’s content over the top of the dishes to come.

Starting the meal off is the Lingotto di Mergozzi (smoked lake trout). Restaurant manager and Piedmont native Matteo Morello explains the origin of the fish -- from the shores of tiny Lake Mergozzo -- and how rare it is to find it on this side of the world. The trout is smoked for hours before being set in humidity for its natural flavours to marinate. The cured fish is then decorated with a line of balsamic vinegar dotted along the meat. We’re advised to cut along the dots so each bite holds the right proportion of fish to sauce.

Up next is a classic that we’re all too familiar with, the Vitello Tonnato (veal with tuna). This rendition of the Italian favourite is similar to what you’d be served elsewhere, with the exception of its presentation. Instead of thin cuts of cold veal fanned onto a plate and drenched in gloopy tuna sauce, our version was a pretty pink pouch pocketing the tuna sauce with dried and re-humidified red bell pepper sponges and a sprinkling of caper dust. Though the flavours were not particularly surprising, we appreciated the artful delivery of an old favourite.

The only carb-heavy dish on the menu, and maybe the most important dish of the meal, is Carbonara “Au Koque”. The menu translates in English as homemade tagliolini, “Au Koque” carbonara sauce and Vigezzo Valley cured ham. To be completely honest, we were a bit thrown off by the words “sauce” and "carbonara" in the same sentence. Luckily, our skepticism was quickly reversed and confidence quickly restored. A twirl of noodles sits in the centre of this dish, and resting on it is a crisp of cured ham in place of bacon.

This is the moment to grab your phone if you want to capture that sauce pour for social media: A generous river of liquid gold floods the void between the tagliolini and edge of the bowl, isolating it to allow for a first taste without the decadent sauce of egg yolk and gin. The au koque cooking method is a painstaking one that requires the sauce to be heated at low temperatures until the gin evaporates, so as to maintain the egg’s runny goodness without compromising the flavours of a true carbonara. Each forkful can be slathered in sauce which is velvety but not too creamy, leaving you feeling satisfied but not bloated, guilty but deserving.

Our bellies are filled up and it’s time for dessert. It’s not until our meal comes close to the end that we remember the lonely lump of Piedmont’s finest truffles untouched at our table. So to allow for us the experience, the restaurant kindly accommodated and changed our last course into a truffle-able one. The zabaione di spumante e torta di prugna (custard with plums and zabaione) is a plum cake that takes sweetness to the next level with Champagne and egg yolk zabaione, or Italian custard, topped with biscotti. Finally, the time had come for the shave. We blanketed our entire dessert with a thick covering.

Would I have still enjoyed it being less greedy? Absolutely. Did I get carried away? Guilty again. The interactive experience the restaurant intends for its customers is definitely a profitable one. There isn’t anything quite like the satisfaction of slicing your own, deliciously smelling fresh summer truffles. So go ahead, make it rain!
